Mushrooms cooked in vine leaves from Elizabeth David on Vegetables by Elizabeth David

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The mushrooms in vine leaves are in the oven - the first time for this year.

Elizabeth David gave this recipe for baking mushrooms with vine leaves in her beautiful book An Omelette and a Glass of Wine and includes it in a few of her books. She says she first saw the recipe in Edmond Ridhardin’s 1913 book L’Art du Bien Manger. It is as good today as it was a century ago. It is a classic recipe and the best (IMHO). It is amazing what the leaves do to the mushrooms. A favourite recipe.
