    Can substitute pearl barley for black barley.

    Really nice textures--the barley makes it very filling. The dressing wasn't as tangy as anticipated, maybe because I didn't have a fresh orange for juice & zest, & substituted OJ concentrate. I would have liked a stronger dill flavor also, so will add more next time. This could be an interesting addition to a potluck.
