Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Can substitute granulated sugar for preserving sugar.

    Made this last year with preserving sugar and I ended up with bramble concrete rather than jelly (much to the amusement of my family!). I'm glad to report that this year's batch using ordinary granulated sugar has worked perfectly and tastes great. The Bramley cooking apples provide all the pectin needed.
