    This takes advance planning as both the pate sucre and the almond cream filling must be chilled. I followed the weights in spite of my annoyance at specifying 47 g of this and 46 g of that. I drew the line at using 1.1 eggs (56 g) in the crust and 0.8 (44 g) eggs in the filling. I can attest that the tart did not suffer for my imprecision.
