    Baked as 10 muffins cups (filled to the brim) with peach pieces layered in the center and placed on top so they wouldn't sink to the bottom. Used 2 egg whites instead of a whole egg and added 1.5 Tbsp ground flaxseed as extra binder and more fiber. Baking time was 30 min. Texture was nice and they held their shape. Next time I will make 12 to get more peaches in, plus increase the vanilla and almond extracts.
