    p. 58 - Truly scrumptious and versatile. I’ve used this recipe on a number of occasions. This time around I added 2 b/s chx thighs (chopped), some peas and black olives to the mix. I always add 1tsp of smoked sweet paprika and 2 Thai bird chillis. The recipe calls for Arborio rice and incorporates the chicken stock a little at a time so the dish is prepared much like a risotto.
