    Fresh Fava Panzanella 181 1 red onion 1/4 in slices macerated in 1/2 c red wine vinegar and water to cover 30 min 4 lb fava beans, shelled, croutons made from 4 slices country bread, 1 bunch mint Lemon vinaigrette: zest and juice of 2 lemons, 1t sugar, 1 c olive oil, 1/4 t salt Blanch favas 1 min, then shock, peel. Toss all (drain onions), let stand 1 min before serving.
