    French Onion Soup 231 6 onions in 1/4 in thick slices, 1 c cream, 1T ea butter and duck fat, 1 t salt, 2 c white wine, 1 quarts rich chicken stock, 4 slices toasted country bread, 5 oz grated gruyere Caramelize onions in cream, butter, duck fat and salt, deglaze with wine 1/2 c at a time, add stock and simmer, place in bowls, top with bread and cheese, bake at 400 20-30 min
