    I had applesauce to use so I’m glad I found this recipe. These loaves have a good texture and taste fine but I prefer other fruitcakes. Southern Living’s “Cassandra’s Light Fruit Cake” is excellent, but the “Dried Fruit, Nut, and Spice Cake” that appears in the Thermador Taste of America cookbook is probably even better. I baked some of the batter of “Gram’s Lighter Applesauce Fruitcake” in mini loaf pans. I doused one baked loaf with dark rum to see if that will make the flavor richer. I plan to try the soaked version next weekend.
