    Absolutely the best French onion soup! Every time I make this I wonder why I don't make it more often. After slicing all the onion it's pretty much hands off. It does, however, require a lot of oven time to caramelize the onions. When I don't have the 4 pounds or so of onions I throw in sliced shallots to make up the difference. Delicious, delicious!
