    Have made this several times for solstice dinner. I pressure cook the pork to save some time, as the second simmering adds a lot of texture and flavor. You can do the first step a day ahead which makes the main cook a little less work (and the broth defats nicely). It is rich and meaty but serve with some veggies and all is well.

    Too much meat. Not anything to balance it.
