    First attempt at cutting a young coconut. It was tough going but thrilled that my Chinese cleaver did the trick. When I tried this recipe I used my Vitamix blender, next time I will use the food processor instead as I found it a challenge to get much of the yoghurt out of the blender jar. It was so thick much of it stuck to the blade. The longer this 'yoghurt' is left the thicker and whiter it gets. Let down using more coconut water. I use this to serve with muesli & berries. Tastes quite nice!
