The recipe does not use rib-meat. Can substitute chile powder for chile molido, ancho chiles for guajillo chiles, barbecue sauce for the book's "Java Gal's lemon BBQ sauce" recipe, duck fat for bacon fat, and cooked beans for the book's "Black beans" recipe.
