    Can substitute unbleached all-purpose flour for high-gluten flour.

    Loved this bread! I used all purpose flour (Canadian ap flour has higher gluten), with walnuts and almonds in addition to the raisins and cranberries. The dried fruit gives a slightly sweet bread, the whole wheat flour adds texture. Baked in preheated oven in cast iron pot 30 min at 425 with lid on then 10-15 minutes with lid off. Will definitely make again. Update: a similar bread (not indexed on this site, but on the King Arthur website) is the fruited sourdough which can be made with active sourdough only.
