    I copied this recipe out of a friend's book years ago. Rich with a mirepoix sauteed in LOTS of butter, both sharp cheddar + parmesan and of course beer, it is the house favourite for a "treat ourselves" pot of soup. I do add 2 things....a big handful of chopped ham and several shots of hot sauce (to taste).
