    I substitute the Sugar for Xylitol and stevia to make the cake even more healthy. It's a lovely recipe and keeps well (if allowed!) because of the rum content. I also make my own powdered Xylitol for icing/frosting by using a high speed blender and adding a pinch of cornflour/starch to the xylitol. It's not a bad subsitute although doesn't behave exactly like sugar when mixing with a liquid.
