Butternut squash and spinach lasagna from Eats Well with Others by Joanne Bruno

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I was in search of a lasagne recipe with butternut squash and something other than my usual sage leaves. This was perfect, especially as I used frozen spinach b/c we are iced in and can’t access fresh produce rn. I streamlined this quite a bit but kept the main ingredients. I cubed and roasted the squash but didn’t puree it with the ricotta. I used butternut squash soup instead of marinara for the sauce, and frozen spinach instead of fresh. It took much longer to bake but I think that is due to my lidded casserole dish. I will probably make this again; it is going to be a long winter.
