    My favourite salad. Can take a while to make but so versatile and delicious. I normally use quinoa and lentils. I have left out the honey and swapped coconut yoghurt for the Greek yoghurt for friends who are vegan. The pomegranate makes the salad extra tasty but have swapped it for dried cranberries when I couldn't get hold of one.

    Made this Christmas Day and it was loved by everybody. Used freekeh and French lentils. Didn't have pomegranate but will add it next time as I think it would make it even better
