    These enchiladas were unlike any I’ve ever made but they were delicious. The honey note came through as a nice contrast to the lime. We added a bit of green Tabasco sauce to amp up the spice flavor and it was just right. Next time I would make and cool the chicken first and get it into the marinade, then make the avocado sauce and let it cool while preparing the pan and assembling the other ingredients to make the whole prep process go faster.

    I'm not an enchilada expert, but I thought these were delicious and a great way to use up leftover chicken. The avocado cream sauce was new to me and was an interesting and flavourful element. I might add a bit more spice next time to the chicken filling, perhaps some chipotle flavouring. Some salsa on the side complemented the dish perfectly.
