    I made this recipe for Thanksgiving. Fabulous cheesecake that improves in flavor over a day or two. I used full-fat cream cheese instead of the specified low-fat. I also added a generous teaspoon of bourbon vanilla. I used Swedish-style gingersnaps that had a more intense flavor than the generic American brand---needed to add another tablespoon of butter for the crust because the cookies were less moist. But the flavor they added was exceptional.
