    With temperatures in the upper 90s today, this seemed like a perfect dish for dinner. It's a light, refreshing summer dish. I served it over a bed of watercress which added a nice peppery bite. The dressing is tasty and a bit different with the apple cider vinegar. I had a bit more shrimp than the recipe calls for, so increased the other ingredients accordingly. That amount was more than plenty for two of us to have this as a dinner entree. This could easily become a staple dish over the summer in our house.
