    Coffee and walnut cake is my mums favourite so I had to make it when she was through for new year! I forgot to add the cardamom to the icing but added to the sponge. Also I didn't make the caramelised walnuts, just toasted them to save a bit of time. Sponge was delicious, very moist and light and the roasted walnuts added a lot of texture. Split between 2x20cm tins, baking at 160 fan and swapping them around at 18 mins, one needed 20 mins and the other 22min. Icing was a little sweet though, maybe needed a bit more coffee or might have been better with the camp extract so I think it would have been really sweet with the caramelised walnuts. All in all a very tasty cake and I'd probably make again.
