East Texas field pea salad with barbecued Thousand Island dressing and heirloom tomatoes from The Texas Food Bible: From Legendary Dishes to New Classics by Dean Fearing

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute the book's "Texas-style barbecue sauce" for smoky barbecue sauce.

B+/A-. Pretty good. I added some lemon juice. Definitely only make a half batch of the dressing; there will still be lots leftover. Does the dressing really need so many ingredients??? Not convinced that it does.
