    The spices in this dish, especially the cinnamon, ginger, cloves and nutmeg probably reflect the Moorish influence on the cooking of Spain. Unfortunately, I couldn't say that I really enjoyed these flavors with eggplant, which was then topped with manchego. Won't repeat.
