Can substitute English cucumbers for Persian cucubmers, mixed spring greens for baby spinach, the book's "Chia crunch croutons" for pita chips, "the books "Shake-on-salad crumbles" for slivered almonds, and baby arugula or salad greens for chickory.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I was pleasantly surprised at how great this was. My chicory was so bitter, but the flavours balanced really well and the salad was delicious. (I replaced the cucumbers with oranges and the chickpeas with pinto beans, based on what was to hand.)
