    Had some tatsoi. This is quick, easy, and tasty.

    I had some lovely Asian mustard greens from the farmers market and made this sauce to dress them. It was wonderful and so easy -- just toss the sauce with the uncooked greens. We really enjoyed it. I think this would work well with any greens. The only change I might make in the future would be to reduce the soy somewhat and increase the ginger a bit. But it was also fine as is.
