    This dish is comfort food with a capital C. I made this for a side dish with Easter ham and it was decadently delicious. I used 2/3 heavy cream and 1/3 2% milk and it was just right, creamy and luscious without becoming too rich. I also used a mixture of sharp cheddar and gruyere cheeses for the topping. I had leftover toasted panko crumbs that had been mixed with fresh thyme and Dijon mustard before toasting so I sprinkled these on top during the last half of the bake time and they added a nice flavorful crunch.
