    Can substitute pancetta or bacon for guanciale, and spaghetti pasta for bucatini pasta.

    I made this with pancetta. It was easy and pretty good but doesn't touch the Amatriciana I had in Rome. I guess I'll have to keep looking for the perfect recipe.
