    Great side or main dish! This is meant for the slow cooker (2-2 1/2 hours), which I didn't realize till late; the dish was begun in the cooker, but then switched to a pan to speed things up. It is rather like farro risotto with bright lemon-accented spring veggies. Filling but also light. I threw in some snap peas that needed using plus peas as required.
