    This will be my go to roast chicken recipe, including when I need to break down a rotisserie chicken; I'm making this instead. Doesn't require marinating time, which is great, and comes out PERFECTLY. Made it sans fennel and stuffing the cavity with cilantro when I made it with my boyfriend in his ancient gas stove, and it was perfect. Made it at home exactly as the recipe stated in a modern electric oven, and it was perfect. SO moist.
