    I baked 2 large russets and made the full amt of the simple chili using 4 oz of grd beef + 2 oz of fresh chorizo in place of turkey. Rather than open a can/jar of tomatoes for such a small amt, I used salsa, used black beans in place of refried and the chili is easy to heat up to taste (as we did). She gives lots of suggestions for toppings & we enjoyed this fun little meal with a side of dressed up corn. And since a 1/2 potato each was lots, we now have lunch for 2 waiting in the fridge.
