    A good old vegetarian standby that is a place to throw all your spring herbs into. I sometimes sub in farro for the orzo and that works nicely.

    7/2002: Not great (though Dad liked it). Used dried dill and did not use artichoke hearts. 9/2025: Wonderful! Extra onions and garlic, green and red peppers, home-cooked Royal Corona beans with some of their broth, fresh tomatoes, whole 12 ounce bag of Trader Joe’s frozen artichoke hearts, fresh mint and parsley, Italian oregano in place of marjoram, dried dill. Farfalline in place of orzo. Kept pasta separate until serving, as for pasta e fagioli (Sundays at Moosewood). Served with a really nice red wine vinegar, Kalamata olives, and toasted levain.

    This is delicious! I had to leave out the mint because I didn't have any and substituted pinto beans because I was out of cannellini beans, and it was still fantastic. It tasted rich and buttery though it only had olive oil.
