Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    We enjoyed this simple soup and I agree with Zosia that you need to take your time while softening/simmering the veg. I used the blender for a very smooth base before adding the extra corn and to finish, I stirred in chopped red peppadews (for their pop of colour & hit of "pickly acid") + lemon basil pesto which meant I didn't need the extra lemon juice called for. This is creamy with no dairy and with corn on hand, I will it make again.

    Delicious soup that reminds me a little of succotash with its inclusion of red pepper (which also tints the soup so it's a pretty pale orange) but the recipe seriously underestimates the time it takes to brown onions or simmer potatoes/vegetables until they're soft enough to puree easily. I added the naked cobs to the simmering soup for extra flavour.
