    Well, for the second meal in a row, my husband liked a dish way more than I did. I really did not enjoy this at all. At the very least, it needed some additional southwest-style spices -- chili powder and or cumin, for example. The cooking method for the vegetables left them still half-raw rather than nicely golden brown. The avocado-cilantro sauce was much too thick to be considered a sauce, and even adding water, as the recipe suggested, only served to dilute the flavors, but not turn it into a sauce. Won't be making this again.
