Maple applesauce from Apples of Uncommon Character: 123 Heirlooms, Modern Classics, and Little-Known Wonders, Plus 20 Sweet and Savory Recipes by Rowan Jacobsen

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I used Pink Pearl apples from the first big crop my tree produced. I used brown sugar instead of maple syrup, just cause I wasn't sure I wanted the maple flavor in this. Spices I added were cinnamon, clove, nutmeg and a pinch of cayenne. I didn't measure, just added to taste. I followed the recipe tip not to bother peeling the apples. I pureed the sauce in the Vitamix and it came out silky smooth, so no worries there. Flavor and texture both very good.
