    This is the best ratio to make a great Bee's Knees.

    The addition of lavender bitters made this a bit different from the classic Bee's Knees recipe I was familiar with. I used St. George Terroir Gin and Scrappy's Lavender Bitters. I didn't have acacia honey, so I used Sage Honey which is a light-colored honey. I used exactly the 3 drops of bitters, but added a bit more to the finished drink after tasting. Very tasty.
