    Can substitute vegetable broth for chicken broth to make vegan.

    I've been making this soup for years and we always enjoy it. I reduce the amount of barley by half because otherwise it absorbs all of the broth. I also add red pepper flakes for spice and lemon zest or juice for a bit of brightness.
