    I made this recipe in a bit of a rush this week and found it an extremely straightforward method that easily produced 48 delicious macarons which were so quickly eaten by my friends that I didn't manage to get a photo. I drew around a metal cutter with a pencil onto a piece of baking paper to give me a size guide for the piping but you could equally easily portion them out with a scoop or by weighing them. I found the wetted pastry brush was useful for reshaping the wonky ones on the tray too. I made two trays full and they didn't spread at all during baking but did puff up on top, the tray I pulled out at the fifteen minute mark had the better texture once cooled. The tray I left in for another five minutes was slightly too crunchy but still went down well with the eaters. When I repeat them I think I might experiment with making slightly larger versions and adding some flavours to them as well. HIGHLY recommended from me too!

    I tried about 4 other macaron recipes before a friend gave me this book. Each time, I waited for a perfectly dry day and followed instructions with a scrupulousness I have not taken on ANY bake since my first solo cake (at age 9). Each one was a miserable failure. I'd become convinced that macarons were beyond me. Then I woke up one Sunday morning in a baking mood and, flipping through this book, thought "what the hell." I had everything in the house, so all I had to lose was time. To my total shock, my macarons were PERFECT. I nearly keeled over! So did everyone at the office lucky enough to be gifted one the next day. After that, Edd Kimber joined my personal kitchen pantheon. HIGHLY recommended!!!
