    Very good enchiladas, I like the additions of onions and fresh tomatoes and cilantro to the enchilada sauce. I did have a block of pepper jack but opted to use a package of pre-shredded Mexican blend cheese. I also made my own enchilada sauce using the Mexican enchilada sauce recipe on www.food.com, made half a recipe and that was plenty; did not serve sauce on the side, just poured all over casserole.

    This has been a staple recipe for leftover Thanksgiving turkey for many years. We really like it and it's nice to have a dish that doesn't seem like leftovers.
