    Can substitute maple syrup for boiled cider, unbleached all-purpose flour for white whole wheat flour, and almonds for pecans.

    These cookies were quite good but they weren't what I was expecting. They were described as soft and tender in the head note, but mine came out very crisp and very flat which was disappointing. I lowered the temperature for the second batch, but they still spread a lot, and were done in about 10 minutes. Very sweet, a bit too sweet for me, but after freezing some of them and eating them later, I liked them a bit better. I probably won't repeat these since there are so many other cookie recipes to try.
