    These are very delicious! Made with 1.2 cup coconut oil (melted) instead of the other oil listed in recipe, and 6 oz bittersweet chocolate because we didn't have any unsweetened chocolate. Took out about 4T of the sugar to account for the extra sugar in the bittersweet chocolate. Also, added chopped crystallized ginger and a bit of ginger powder. Very delicious! I think they are better the next day. I also wonder if there is a bit too much salt - usually I like a lot of salt in my cookies, but this might have been just a bit too much.
