Roasted chayote with herbs and tofu (Chayote asado con hierbas y tofu) from More Mexican Everyday: Simple, Seasonal, Celebratory (page 142) by Rick Bayless and Deann Groen Bayless

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

1-31-2018 I found the choice of silken tofu here a little odd. I think a soft - but not silken - tofu would have had a better texture for this and the dressing would cling to it more. The dish is very tasty. Adding the lime and zest is essential because the "adobo" has no acid. I used extra herbs which added a lot of punch - I would do that again. I would happily make this again, with the changes to the tofu and the extra herbs.
