    I made these with 4.5 oz of sausage & 3 eggs for 2 full sandwiches which ended up big and very filling. I stirred tomato relish into the mashed beans and we topped them with my homemade tomatillo salsa verde. I served them with a small salad and they were very good...however, when I make them again I think I will scale back a bit more and try the open faced knife & fork route as we were stuffed!
