    These are delicious. Quite a few steps for simple muffins, but you can save time by cooking the squash in advance. I was skeptical that a 300 degree oven would do the trick, but they were cooked through in 25 minutes. They were a bit flat, but I realized too late that my baking powder was old, and I’m thinking that may have caused the issue.
