Weekend dish: red chile pozole with pork (Pozole rojo de puerco) from More Mexican Everyday: Simple, Seasonal, Celebratory (page 276) by Rick Bayless and Deann Groen Bayless

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute canned hominy for nixtamal.

Nixtamal should be labeled nixtamal or pozole corn - it is the dried product cooked into hominy. Meaty pork neck bones can be substituted for the pigs feet.
