    This was delicious. Perfect for summer produce. I used fresh basil and oregano. For the cheese I used bagged Quattro Fromagio from Trader Joe’s, so it was more than just mozzarella. In the future I would just put the tomatoes on top without dredging in breadcrumbs. I didn’t love it. Also, one medium tomato was sufficient.
