    This made a very good filling for the squash. I speed up the squash cook time by scoring the flesh and raising oven temp to 400. It’s easy to prepare the mushroom filling while the squash cooks for 20 min; once filled, the squash cooks for a further 15 min or until cooked through. I often grate some cheese over them after cooking. If I have extra filling, I bake it in ramekins to serve along side. Sadly, this recipe was left out of the revised editions of this book.
