    I made this salad on a particularly hot day a couple of weeks ago and it was the perfect dinner for a steamy day. Very simple to prepare -- I followed the directions exactly except that I used sugar snap peas instead of snow peas because I already had them on hand. I also didn't bother to halve the shrimp lengthwise, just cut them in half crosswise. I'd make this again anytime for a light summer meal.
