Farro tabbouleh from New England Open-House Cookbook: 300 Recipes Inspired by the Bounty of New England (page 285) by Sarah Leah Chase

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute mild blue cheese for feta cheese. Requires refrigerating for 2 hours to let flavors meld.

I just made another batch of this. It's so good. I love the nuttiness of the farro and how it goes with the tart dressing and the crisp veggies. This keeps well in the fridge for about 3 days (I wait to crumble in the feta until I'm ready to serve and it's also great without, served with grilled chicken). This time I added just a bit of za'atar and I like the flavor.
