    These are an easy weeknight dinner. The oven instructions worked well so I didn't need to use the grill. Make sure the bacon is not thick-cut, as that would make it harder to roll. I used 2 avocados and 1lb of bacon for about 3lb of chicken. I pounded the chicken thin, added guacamole, and laid it out on two strips of bacon, then rolled the whole thing up. Next time I would season the chicken itself better. Served with roasted potatoes and mexican corn.
